I love making my own meatballs. The ingredients are different every time, depending on what is in the house, but here is the basic recipe. They always come out tender, juicy and a little crunchy on the outside. Enjoy!
1lb Lean Ground Beef
2 Cloves Garlic (pressed)
1/2C Italian Seasoned Bread Crumbs
1t. Minced Onion
Dashes of dried Oregano, Parsley and Basil
S&P to taste
Oil to coat pan
Pasta and tomato sauce of your choice
Combine all ingredients in a big bowl. Mix with hands.
Form into balls and move to a lightly oiled pan over medium high heat.
Brown on all sides (don’t worry if they stick…that’s extra flavor)! Remove from heat when almost completely cooked. Add to a pan of warming pasta sauce. (Of course, if you aren’t going to sauce these, cook them all the way through before serving). Anyway, the pasta sauce will continue the cooking process and keep them warm until your pasta is ready.
Serve over any pasta, and with copious amounts of Parmesan/Romano cheese.
